A few days ago I read an article about '#Hwa_byung' which is a Korean mental illness which arises when people are unable to confront their anger as a result of conditions.
The word hwa-byung is composed of "hwa" meaning "fire", "angry",
and "byung" meaning "syndrome" or "illness".
You might wonder why I'm talking about this depressed thing!
I'm telling you now why I did that shortly and the main topic "Han" right after.
Interestingly, Hwa-byung is known as a culture-bound syndrome.
The bound culture is "Han" what I'm going to tell you now.
Han is a concept in Koren culture attributed as a unique Korean cultural trait.
Originally Korean is very cheerful and delightful people
you could know through last week topic 'Heung'.
This pain sentiment has resulted from Korean long history of outside invasions and wars.
So if you want to know more about Korean Han trait,
you need to learn Korean history properly.
I would recommend you "DMZ tour".
It will help well to show and understand you the most hurtful and recent history of Korea, the problems between North Korea and South Korea.

what is real Korea that actually you have to know, see and enjoy!
so I decided that I will upload the series of Korea spoken by real Korean!
It's going to be really fun!!!

We made " tteok guk” for our guests at Travelers Planet Hostel Common area which is 4th floor!!!
I think the real key to this soup is making a clear, delicious broth, which takes some care and attention to do. But overall this is a very easy recipe to make.
Often, Koreans add mandu (Korean dumplings) to tteokguk, in which case the soup is called tteok-manduguk. You can use any kind of mandu in the soup
Why don’t you make a resolution to try tteokguk on new year’s day, and let me know how it turns out :)
* Ingredient
- 600g white rice cake
- 300g beef (brisket·shank), 1.6kg (8 cups) water
- fragrant seasoning : 20g green onion, 10 g garlic
- seasoning sauce : 3g clear soy sauce, 1.1g (¼ tsp) minced green onion, 1.4g (¼ tsp) minced garlic, - 0.1g black pepper
- 6g (1 tsp) clear soy sauce, 6g (1½ tsp) salt
-20g green onion, 60g (1 ea) egg, 1g shred red pepper
* Ingredient preparation
1. Clean blood of beef with cotton cloths. Wash the fragrant seasoning cleanly.
2. Put the beef and water in the pot, heat it up for 7 min. on high heat. When it boils, lower the heat to medium, simmer it for 30 min. Add the fragrant seasoning, simmer it for another 30 min.
3. Shred the white rice cake 4cm-long, 0.2cm-thick diagonally.
4. Wash the green onion and cut it into 2cm-long lengthwise diagonally.
5. Pan-fry eggs for yellow/white garnish and cut into 2cm of diaper shape.
6. Cut the shred red pepper into 2cm-long.
* Recipe
1. Filter the simmered broth (1.4kg) through cotton cloths, rip up the beef along with the texture (160g).
2. Pour the broth in the pot, heat it up for 5 min. on high heat. When it boils, add the sliced rice cake, boil for 3 min. When the rice cake float on the surface, season with clear soy sauce and salt, add green onion, bring it to a boil once more.
3. Dip up the soup in a bowl, garnish with beef (80g), egg and shred red pepper.

We made "Bean Sprout Soup” for our guests at Travelers Planet Hostel Common area which is 4th floor!!!
Let me tell you how to make it :)
* Ingrdients
- 3 cups soybean sprouts, washed and if desired, roots trimmed
- 6 cups water or broth
- 2 cloves garlic, minced
- 2 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1 tsp salt
- 1 scallion or bunch of chives (optional garnish)
- 1 Tbsp Korean red pepper powder (kochukaru) (optional)
*Directions*
1. In a medium-sized pot, saute garlic in soy sauce and sesame oil over medium heat for 2-3 minutes.
2. Add water and bean sprouts and bring to a boil over high heat.
3. Reduce to low heat and simmer for 25-30 minutes, or until you can smell the strong odor of bean sprouts cooking.
4. If you're making the spicy version, add the red pepper powder 5 minutes before turning off the heat.
5. If you're using scallions or chives to garnish, add to the pot at the end and then immediately take off heat.

We made "Spinach Miso Soup” for our guests at Travelers Planet Hostel Common area which is 4th floor!!!
I am a big fan of miso soup, and this one is fairly straight forward with ingredients that are easy to find. Plus, it tastes great. If you prefer, you can replace the spinach with bok choy
Let me tell you how to make it!!
* Ingrdients*
6 cups water
1 1/2 cups baby spinach leaves, cut into thin strips
1/2 cup thinly sliced fresh shiitake mushroom
3 tablespoons minced scallions
1 tablespoon tamari
1/3 cup mellow white miso
4 ounces extra firm silken tofu, drained and cut into 1/4-inch dice
*Directions*
1. Place the water in a large pot and bring to a boil over high heat.
2. Add the spinach, mushrooms, scallions and tamari.
3. Reduce heat to medium and simmer until the vegetables soften , 3 to 6 minutes. Reduce heat to low.
4. Place about 1/4 cup of the hot soup mixture in a small bowl and add the miso, blending well.
5. Stir the mixture back into the soup, add the tofu and simmer for 2 minutes, being careful not to boil.
6. Taste, adjust the seasonings if needed, and serve hot.

We made Sauce Braised Quail Eggs[mechurial jangjorim] for our guests at Travelers Planet Hostel Common area which is 4th floor!!!
Let me tell you how to make it!!
Ingredients
20 Quail Eggs (2½ Cups Water + ½ tsp Salt)
7 Garlic Cloves, 1 Tbsp Green Hot Pepper, 1 Tbsp Red Hot Peppe, 1 Cup Water, 1 Kelp (1 X 1 inch), 2-2½ Tbsp Soy Sauce, ½ Tbsp Sugar, ½ Tbsp Cooking Wine
1. Boil the quail’s eggs with 1 tsp of salt for 10 minutes.
2. Empty the hot water and cool the eggs with cold water.
3. Peel off the egg shells.
4. To make the broth, add ⅔ cups of water, garlic cloves, soy sauce, sugar, cooking wine, and 1 (1 inch square) piece of kelp in a pan. Boil on high. Once it starts to boil, cook for 2 minutes, and then remove the kelp.
5. When it starts to boil, add the quail’s eggs, green and red hot pepper.
6. Boil it on medium heat until half the sauce disappears. (Stir it every 3 minutes.)
7. Cool it down for about 1 hour.
